One other interesting thing to note about Rouge de Bordeaux: we have found that many of our friends and family who have a gluten intolerance do not have a negative reaction to products made with Rouge de Bordeaux. This flour has it all-- high-extraction, high protein content, a lot of flavor. I get good structure, a creamy interior and a crispy thin crust using a very standard formula -- 80% hydration, a reasonable autolyse, an active fresh starter, a reasonable period of bulk fermentation, and steam during the bake. A very easy flour to work with. The satisfaction of buying from a family farm is a bonus.
I bought a bag of this flour to try and used it exclusively in my recipes. Within a week, my skin cleared up, the constant rashes on my hands and across my chest disappeared, and my heartburn was gone. My family loved it, too!
I love the Rouge in my sourdough loaves. I lean to about 50% Rouge with my regular bread flour and the taste and texture is awesome. I’m hooked
