Gourmet Yellow Mustard

This recipe is made with our gourmet regenerative yellow mustard seed! It is a super simple process, it just takes a little time! This recipe makes two cups of mustard (using a whole 3 OZ jar of mustard seed), but you can halve the recipe to make only one cup. Enjoy on your hamburgers and hotdogs, sandwiches, and in your salad dressings! You will never want to go back to conventional yellow mustard again.

Ingredients

½ cup regenerative yellow mustard seeds (90 g or a whole jar)

1 ¼ cups water (310 ml)

4 tbsp white wine vinegar (60 ml)

1 tsp salt

½ tsp onion powder

½ tsp turmeric

¼ tsp paprika
Directions
In a bowl, combine the mustard seeds, ¾ cup (180 ml) of the water, 2 tbsp (30 ml) of the vinegar and ½ teaspoon of the salt. Mix to combine. Cover and let marinate for 24 hours at room temperature.
Drain the mustard seeds 24 hours later and put them into a blender. Add the remaining water, vinegar, salt, and spices. Puree until emulsified and as smooth as possible. Add more water 1 tbsp at a time if needed until it reaches your desired consistency.
Transfer the mustard into a 2-cup (500 ml) glass jar. Tightly seal and refrigerate for 7 days. The flavor of the mustard will continue to develop over this period. The mustard will keep for 6 months in the refrigerator.
Recipe Note
- You could eat the mustard right away, however we seal and refrigerate it to develop that flavor that you will love! So it is worth the wait!
- You can adjust the consistency to your liking - we enjoy it a little less smooth then typical American mustard but you can make it however you want!
