Homemade pita bread may sound intimidating, but it is actually really easy and fun to make!
Ingredients

2 tsp active dry yeast

½ teaspoon sugar

2 ½ cups White Whole Wheat flour, divided

2 tsp kosher salt

2 tbsp olive oil
Directions
Make a sponge by whisking together the lukewarm water, yeast, sugar, and ½ cup of the flour in a mixing bowl. Cover and place in a warm place for 15 minutes to bubble.
Once the 15 minutes is over, add the salt, olive oil, and remaining 2 cups of flour (up to ½ cup of additional flour may be added during the kneading process if the dough is too sticky, but don’t add too much). Mix until shaggy, then flour your surface and knead for a couple of minutes until smooth. Cover the dough and let rest for 10 minutes.
After 10 minutes, knead the dough again for a couple of minutes. The dough should be slightly moist, but not sticky. Grease a bowl with olive oil and place the dough in it to rise until doubled for about an hour in a warm place.
Preheat your oven to 475 F with a cast iron pan or baking sheet in it.
Deflate the dough and divide into 7-8 equal sized pieces and shape into balls. Cover them with a towel and let rest for 10 minutes.
Using a rolling pin and a lightly floured surface, roll the pitas out until they are about a ¼ inch thick.
Place rolled out pita (as many as fit on your pan) directly on your hot baking sheet or pan and bake for two minutes on one side. Flip with tongs and bake for one minute on the other side!
Enjoy warm with fresh hummus!
