Mom's Famous Lemon Bars

Mom has been making these lemon bars for years! They taste the best with fresh lemon juice! Double the recipe for a 9x13 inch pan.

Ingredients

1 cup White Whole Wheat Flour

½ cup butter softened

¼ cup icing sugar

2 eggs

1 cup sugar

2 tbsp White Whole Wheat Flour

½ tsp baking powder

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

Crust
Combine the first three ingredients; pat into an ungreased 8in square pan. Bake at 350 F for 20 minutes.
Filling
Meanwhile, beat eggs in a mixing bowl. Add the sugar, flour, baking powder, lemon juice and zest. Beat until frothy.
Pour over finished crust and bake at 350 for an additional 25 minutes or until light golden brown.
Dust with icing sugar once cooled and enjoy!
