Tarte aux Pommes (Apple Tart)

This is a classic French recipe in the Groeneweg house and it is sure to please! The crust does require a bit of planning and pre-baking, but the process is pretty simple!

Ingredients

4 cups White Whole Wheat Flour

1 tbsp of sugar

2 tsp salt

1 ¾ cups butter

1 egg
-
1 tbsp cider vinegar
-
½ cup ice cold water
-
4 egg yolks
-
1 cup heavy cream
-
6 tbsp sugar (4 in custard, 2 on top)

3 granny smith apples, peeled and cut into 1/8ths

Cut the butter into the flour, sugar and salt. Add the egg, vinegar, and water and mix thoroughly.
Divide into two discs, wrap both in plastic wrap, and freeze for 45 minutes or refrigerate overnight.
Bake Crust
Roll out your pie crest and place in a 10 inch tart pan. bake for 10 minutes at 450 degrees F.
Tarte Assembly
Preheat the oven to 400 degrees F.
Starting from the outside, arrange the apple slices in a circle on top of the crust, slightly overlapping until you reach the middle.
In a large bowl, combine egg yolks, cream, and four tablespoons of sugar.
Pour the custard mixture over the apples, and sprinkle the tarte with the remaining 2 tbsp of sugar.
Bake for 30 minutes or until the tarte is golden brown on top and the apples are soft. Serve warm or at room temperature. Enjoy!
