This recipe is a family classic that was usually made in bulk during the winter! It is full of healthy vegetables and is sure to fill you up!
Lentil Soup

A perfect winter lunch!

Ingredients

2 cups green lentils, washed

1 medium white onion, chopped

1 carrot, chopped

2 celery sticks, chopped
-
4 cloves of garlic, chopped or crushed

3 bay leaves

1 tbsp sea salt, to your liking

2 cups diced tomatoes
-
2 cups tomato juice
-
9 cups stock, chicken or beef
-
2-3 oz oil of your choice
-
1 tbsp dried parsley
-
3 oz tomato paste
-
½ tablespoon pepper
-
1 tbsp dill, fresh or dry
Directions
In a large soup pot add the oil, onions, garlic, carrots, and celery. Sauté until the vegetables are almost tender.
Add the diced tomatoes, tomato juice and paste, bay leaves, salt and pepper, fresh dill, parsley, lentils, and the stock.
Bring to a boil, stirring occasionally until the lentils are soft. Reduce heat and simmer.
