French Mustard Braised Chicken and Lentils

Most of the time we post baking recipes but being that this fit so perfectly with our new products, lentils and mustard, and was so delicious, we wanted to share a savory recipe! Here is where you'll find the instructions for cooking lentils and Gourmet Yellow Mustard Recipe!

Ingredients

8 boneless skinless chicken thighs (or 6 bone-in, skin-on thighs)

2 tablespoons olive oil

2-3 cups dry white wine

2 cups water

1 medium yellow onion sliced

2 cloves garlic smashed and chopped

2 tablespoons mustard from LSG mustard seed

1 ⅓ cup dried lentils, cooked and drained

6-8 sprigs fresh thyme

Salt and pepper to taste

1/2 teaspoon chili flakes, optional
Directions
Preheat the oven to 350°F.
Heat the olive oil in a heavy-bottomed, enameled cast iron braiser or any oven-safe pot with a lid over medium-high heat.
Add the chicken thighs to the pot and season with salt and pepper. Brown the chicken on one side, then flip it over.
Add the wine, water, and mustard to the pot. Stir to dissolve the mustard into the liquid.
Add the sliced onion, thyme, cooked lentils and additional seasoning. Cover with the lid and transfer to the oven.
Braise for 2 to 2 1/2 hours, or until the chicken is tender.
Serve the chicken over mashed potatoes or enjoy it on its own with a glass of wine!
