Overnight Baked Flax Seed Blueberry Oatmeal

This is another one of those recipes with a stained page that we have been making for forever! Simple, delicious, healthy, and it can be prepped the night before to just pop in the oven in the morning. The ground flax seed adds a health boost too!

Ingredients

⅓ cup melted butter

2 eggs

2/4 cup dark brown sugar

1 ½ teaspoons baking powder

1 ½ teaspoons vanilla extract

½ teaspoon nutmug

½ teaspoon cinnamon

¼ teaspoon salt

1 cup plus two tablespoons milk

4 tablespoons LSG flax seed, ground

3 cups quick cooking or rolled oats
Directions
Melt the butter and set aside. Grease a 9x9 pan and drop in the eggs. Beat slightly. Add the brown sugar, baking powder, vanilla, nutmeg, cinnamon, and salt.
Grind the flax seed in your coffee grinder or blender!
Mix well, making sure there are no brown sugar lumps. Whisk in the melted butter and milk, then stir in the oats and ground flax. Refrigerate overnight.
Preheat the oven to 350 F. Uncover the oatmeal and bake for 35 minutes or until the top is brown. Serve with warm milk poured over it!
Recipe Note
The reason we sell our flax whole is because ground flax loses it's nutritional benefits quickly after grinding! We use a small coffee grinder, but you can use anything that will pulse it up!
