While our other sourdough recipe takes two days to make, this recipe can be made in a day!

Ingredients

1 cup of active bubbly starter

1 cup warm water

1.5 cups White Whole Wheat Flour

1.5 cups Rouge de Bordeaux Flour

Up to half a cup more water
Directions
Stir the starter and water together in a container or large bowl.
Add the flour and salt and mix in. If the dough is a bit dry, pour in a bit of water and stir until the dough reaches the desired consistency. Then let it rest for an hour.
Once it has rested, stretch and fold the dough 4 times every half an hour, for two hours.
When the stretch-and-folds are finished, let dough sit for two hours and then take out of bowl and shape dough into a ball. Place ball in a banneton with a towel over it, or in a towel draped bowl folding the extra fabric over top. Then place in the fridge for 2-3 hours.
About 20 minutes to when the fridge rise ends, preheat oven to 450 degrees with a Dutch oven or baking pan of your preference. Place dough on parchment paper or a silicone mat and score the top the way you like. Then bake for 30 minutes with the lid on, and then 15 with the lid off. Once done baking, put bread on a rack to cool for a couple hours before cutting into.
