Summer Chickpea Salad

Ingredients

Salad

• 3 cups cooked LSG chickpeas (about 1 cup dried)

• 1 cup chopped cucumber

• ½ cup chopped red onion

• 2 chopped tomatoes

• 1 chopped yellow pepper

• 1 cup chopped cauliflower or broccoli

• ¼ cup crumbled feta cheese

Dressing

• 2 tbsp lemon juice

• ½ teaspoon each of salt and pepper

• 1 tbsp red wine vinegar

• 2 minced cloves of garlic

• 2 tsp dried oregano

• 2 tsp dried parsley or mint

• 2 tsp dried basil

• ⅓ cup oil
