Ingredients
-
¼ oz package active yeast (1 tbsp)
-
1 tsp salt
-
½ cup sugar
-
1 cup warm milk (105-110F)
-
2 eggs
-
4 cups White Whole Wheat Flour
-
⅓ cup butter, melted
-
½ cup blueberries
-
1 tbsp sugar
-
1 tbsp water
-
1 (8oz) block softened cream cheese
-
¾ cup powdered sugar
-
2 tsp fresh lemon juice, or the zest of one lemon
-
1 tsp vanilla
-
1 cup blueberries
-
pinch of salt
Dough
Blueberry Jam
Filling
Directions
Dough
Add dough ingredients to the bread machine and select dough setting. If making by hand, dissolve yeast in warm milk in large bowl. Add sugar, butter, salt, eggs and flour. Mix well. Knead well with floured hands. Cover and let rise in warm place for about 1 hour, or until doubled in size.
Once doubled in size, roll the dough out on a lightly floured surface. Roll the dough flat until it is approximately 21 inches long and 16 inches wide. It should be about ¼ inch thick.
Jam
Heat blueberries, sugar, and water in a saucepan over medium heat until the juices release and it is a jam-like consistency. Cool slightly before adding to cream cheese mixture.
Filling
Beat cream cheese, powdered sugar, lemon, vanilla, and salt until silky. Add the blueberry jam to the filling and mix well.
Spread the filling on your rolled out dough and sprinkle the remaining cup of blueberries on top of it. Roll up and cut into 12 even rolls (using unflavored floss really helps avoid making it messy), and place in a 9x13” pan to proof for another 30 minutes or until doubled in size (or place in the fridge to bake next morning). Preheat your oven to 375 during this time.
Bake at 375 for 20-25 minutes and enjoy!
