Ingredients

1 cup (227 g) mashed ripe bananas (about 3 medium bananas)

¼ cup (53 g) granulated sugar

½ cup (106 g) light brown sugar

½ cup (113 g) melted butter

½ cup (113 g) sour cream or greek yogurt

½ cup (128 g) regular or natural peanut butter
-
2 eggs
-
1 teaspoon vanilla extract

1 ½ cups (213 g) Rouge de Bordeaux Flour

1 teaspoon baking soda
-
½ teaspoon salt
-
1 cup chocolate chips (optional)
Directions
Preheat the oven to 350 degrees F. Lightly grease a 9X5-inch loaf pan (make sure to use this size as it is a large loaf). You can also line the bottom with parchment paper for easy removal.
In a large bowl, add the bananas, granulated sugar, brown sugar, butter or oil, sour cream, peanut butter, eggs, and vanilla. Whisk until well-combined.
Add the flour, baking soda, salt and chocolate chips and stir until just combined and no dry streaks remain.
Spread the batter in the prepared pan and bake for 50-60 minutes until a toothpick inserted in the center comes out clean or with moist crumbs.
