Blueberry Oatmeal Flax Seed Muffins

We have been making this recipe for years, and it is a great breakfast option! They are filling and satisfying! Make sure you do not overbake though, as they will be super dry.

Ingredients

1 ½ cups Rouge de Bordeaux flour

¾ cup oats
-
2 tbsp LSG flax seeds, ground

1 tsp baking powder

1 tsp baking soda
-
½ tsp salt
-
1 egg
-
½ cup sugar
-
⅓ cup melted butter
-
¾ cup whole milk
-
1 cup fresh or frozen blueberries
Directions
Preheat the oven to 375 degrees F. Combine your wet ingredients.
Grind your flax seed in a coffee grinder or blender.
Mix dry ingredients and add to the wet ingredients. Fold in your blueberries. Portion and bake for 20-22 minutes! Do not overbake as they will be super dry. Enjoy!
